- Heat olive oil in pan. Gently sauté onions, mushrooms and spinach.
- Beat eggs, cheese and milk together then pour into hot pan.
- Stir eggs every so often till scrambled appearance.
- Season and serve.
1 tbsp of olive oil
3 handfuls of onions, mushrooms and spinach, finely chopped
40 g hard cheese, grated
2 tbsp of milk or soy milk (unsweetened, malt free)
Cracked pepper and sea salt to taste
